I love Winter Melon by its pure and green. It make me feel Spring and happiness. So I called this recipe Happy Soup.
Chop the Ginger into silk and Shallot into little segment.
Slice the Winter Melon into pieces.
Heat the Wok with some oil then put in the Shredded Ginger
Then put in the Winter Melon pieces and keep it turning over, meanwhile put salt with turning over quickly until it get cooked.
Slowly pour in enough water then cover the Wok for almost 7 minutes.
Finally put in the chopped Shallot.
